Every year, in the months of January and February, the Cardocchia Company prunes the vine, a fundamental operation in order to have an optimal harvest, and therefore an excellent organic wine, this operation being necessary to:
- maintain a constant production
- Improve the quality of the grapes to be harvested in September
- Give a precise form of the plant and to improve its nutritional qualities.
This operation will be carried out during the months in which the vine is in its dormancy phase, so cutting some canes will not affect the health of the plant.
Proper pruning is essential for the achievement of an excellent wine.
Thus, Cardocchia decided to produce a minimum quantity of grapes per vine so that few clusters would give unquestionable results in relation with the wine`s fragrance, flavour and sweetness.
